Ingredients
1 cup pitted dates
1 tbsp pure maple syrup
1 tbsp cocoa powder
1 tbsp almond butter
¼ cup protein powder, (I use vanilla plant protein, can use whey for non DFO)
½ cup cacao nibs or sugar-free dark chocolate, cut into small pieces
¼ cup shredded coconut
Preparation
Step 1
Add the dates, maple syrup, vanilla extract, cocoa powder, almond butter, and vanilla protein powder to a food processor and blend until the mixture forms a paste. Add the cacao nibs or dark chocolate and pulse several times, until your desired texture is achieved.
Step 2
Add the shredded coconut to a bowl. Roll into tablespoon sized balls and coat in shredded coconut. Refridgerate overnight for a better texture (optional).
Step 3
Store in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
