Ingredients
2 chicken breasts (substitute with 1 block tofu for vegetarian option)
2 tbsp cajun
2 tbsp paprika
2 tbsp mixed herbs
salt, to taste
pepper, to taste
1 garlic clove, minced
20g butter
1 small cauliflower, cut into small bite-sized florets
150g bacon, chopped
½ cup mushrooms, sliced
½ cup cherry tomatoes, halved
1 cup spinach
1 tbsp coriander, finely chopped (optional)
Sauce:
40g butter
3 tbsp flour
2 cups chicken broth (substitute with vegetable broth for vegetarian option)
½ cup heavy cream
½ cup parmesan cheese, grated
Preparation
Step 1
Preheat the oven to 190°C fan bake.
Step 2
Heat the butter in a large pan over medium heat. Once the butter is foaming, add the cauliflower and bacon. Stir occasionally, and let cook for 5 minutes. Add the mushrooms and cook until they’re lightly golden. Add the spinach and cherry tomatoes to the pan and stir continuously until wilted (roughly 1 minute). Add salt and pepper to taste. Remove from the heat, and set aside in a bowl.
Step 3
In a small bowl, mix together the cajun, paprika, mixed herbs, salt, pepper, and garlic. Coat the chicken breasts in the spice mixture. Heat pan over medium-high heat, cook the chicken until golden brown.
Step 4
Sauce: In a separate pan/pot, add the butter and allow it to melt over low-medium heat. Add the flour and stir until combined. Use a whisk if there are lumps. While mixing, add 1/4 of the chicken broth (it will thicken quickly). Then gradually add remaining broth, stirring as you go. Add the cream, and allow to simmer for a minute. Then add the grated parmesan cheese. The sauce should reach a slightly thick consistency.
Step 5
Add the sauce to the chicken, and then add the cauliflower, bacon, mushroom, spinach, and cherry tomato mix. Add more salt and pepper to taste. Transfer the mixture to a baking dish, and top with grated parmesan. Bake for 20 minutes, or until the cheese is golden. Then serve with fresh coriander (optional).
