Indulge in these Healthy Gooey Brownies, a nutrient-rich twist on a classic treat. The unsweetened dark chocolate, high in antioxidants and flavonoids, supports heart health and reduces inflammation, while cocoa powder provides a dose of magnesium, essential for muscle function. Ingredients
400g unsweetened baking chocolate (or 70% cocoa)
2 tbsp unsweetened cocoa powder
1 tsp baking soda
2 1/2 cup (400g) pitted dates
6 large eggs
1/2 cup coconut oil
2 tsp vanilla extract
1/2 cup frozen blueberries/raspberries
Greek yogurt to serve (or dairy free protein yogurt)
Preparation
Step 1
Preheat the oven to 180°C bake. Line a 25 x 40 cm baking dish with baking paper.
Step 2
Add chocolate, cocoa powder and baking soda to a food processor/large blender and pulse until coarse sand texture forms. Add pitted dates, then eggs, coconut oil and vanilla.
Step 3
Pour mixture into a large bowl and add the blueberries/raspberries. Mix until combined.
Step 4
Transfer batter onto a lined baking dish and spread evenly. Bake for around 20-25 minutes or until a toothpick comes out clean. For a more gooey texture, cook until a toothpick comes out with a few crumbs, but no wet batter. Allow to cool before serving with your choice of greek yogurt or dairy free protein yogurt
