This Keto Bacon Frittata is the perfect high-protein, keto-friendly breakfast! Packed with crispy bacon, rich in protein and healthy fats, this frittata is designed to keep you full and energised. Ingredients
200g bacon (exclude for vegetarian option)
5 large eggs
300g cottage cheese
1 garlic clove, crushed
15g parmesan, finely grated
225g spinach
1 tsp nutmeg, grated
100g whole cherry tomatoes
4 basil leaves, finely chopped
1 tsp salt
½ tsp pepper
Preparation
Step 1
Preheat the oven to 180°C bake. Line a 20cm tin with a single sheet of baking parchment, especially if using a tin with a loose bottom.
Step 2
Chop the bacon and cook it in a skillet over medium-high heat for about 5 minutes. In a large bowl, beat the eggs and mix in the cottage cheese, garlic, half of the parmesan, spinach, nutmeg, salt, pepper, basil, and the cooked bacon. Pour the mixture into the prepared tin, arrange the tomatoes on top, and sprinkle with the remaining parmesan.
Step 3
Bake for 40 minutes, or until the frittata is fully set and begins to puff up. Cut into wedges and enjoy hot or cold. This frittata can be stored in the fridge for 3-4 days.
