This Keto Pizza Frittata is quick and easy to make, and you can customize it with optional toppings like pesto, feta, or olives. 

Ingredients

  • 1 brown onion, diced

  • 2 garlic cloves, minced

  • 2 cup baby spinach

  • salt to taste

  • 8 large eggs

  • 2 tsp dried basil

  • 2 tbsp milk (use DF milk for DFO)

  • pepper to taste

  • 1 ½ cup marinara sauce

  • ½ cup shredded mozzarella (skip this for DFO)

  • cup chicken, cooked and shredded

  • 50g cherry tomatoes, halved

  • 20g mushrooms, sliced

  • fresh basil for topping

  • Optional additional topping ideas: pesto, feta, kalamata olives, red onion

Preparation

Step 1


Preheat oven to 220°. Over medium heat, heat oil in an oven proof skillet. Add onions, garlic, salt, and pepper, and cook until golden. Add spinach, and cook until wilted.


Step 2


In a bowl, whisk together eggs, dried basil, milk, marinara, salt, and pepper. Pour eggs into skillet, evenly covering the surfaces of the skillet. Cook until the edges are cooked, (roughly 4 minutes).


Step 3


Top with mozzarella, cooked chicken, cherry tomatoes, mushrooms, basil, and your desired toppings. Transfer to the oven and bake until eggs are cooked through, (roughly 7 minutes).
