About the Recipe

Indulge in the Protein Boost Chocolate Mousse, a deliciously rich dessert that not only satisfies your sweet cravings but also delivers a substantial nutritional punch. This decadent mousse incorporates two scoops of vanilla plant protein powder, providing a robust source of essential amino acids to support muscle recovery and overall health. The base of the mousse is enriched with six eggs, which offer high-quality protein along with essential vitamins and minerals, including B vitamins and selenium. Sweetened naturally with one cup of dates, this dessert provides dietary fiber that aids in digestion and helps regulate blood sugar levels, while also adding a caramel-like sweetness. The inclusion of two tablespoons of cocoa powder contributes powerful antioxidants, specifically flavonoids, known for their heart health benefits, and two tablespoons of coconut oil add healthy fats that can enhance satiety. With approximately 25 grams of protein per serving, this Protein Boost Chocolate Mousse is a delectable, nutrient-dense option for health-conscious individuals looking to indulge without compromising their dietary goals. (For additional nutritional information see Ingredients Index).

Ingredients

•  2 scoops protein powder (I use vanilla plant protein, can use whey for non DFO)

• 6 eggs

• 1 cup dates

• 2 tbsp cocoa powder

• 2 tbsp coconut oil

Preparation

Step 1

If your dates are very dry, soak them in warm water for 5-10 minutes, then drain. This will make them easier to blend and result in a smoother mousse.

Step 2

Add all ingredients to a high-powered food processor or blender. Blend on high for 1-2 minutes, or until the mixture is completely smooth and creamy. Scrape down the sides as needed to ensure all ingredients are well incorporated.

Step 3

Adjust Consistency (optional): If the mousse is too thick, you can add a splash of plant-based milk (like almond or oat milk) to reach your desired consistency. Blend briefly after adding.

Step 4

Transfer the mousse to individual serving bowls or a larger container, and refrigerate for 6 hours (preferably overnight) to allow the flavors to develop and the mousse to set.
